Ingredients for rainbow salad
– 4 cup(s) iceberg lettuce, torn by hand
– 2 cups red cabbage, cut into thin strips
– 1 Japanese cucumber, cut into slices
– 1 unit of tomato, without seeds, cut into thin strips
– 1/2 carrot(s), cut into wide strips
– 1 cup(s) pickled mushrooms, cut into 4
– 2 cup(s) frozen broccoli (florets)
– Salt to taste
– extra virgin olive oil to taste
– 6 units of coalho cheese skewers, cut into cubes
Ricotta Sauce Ingredients
– 10 tablespoons of cream cheese (without starch)
– 4 tablespoons of filtered water
– 6 tablespoons of soy sauce
– 3 teaspoons of ginger, grated
Ingredients for decorating
– 4 teaspoon(s) of chia seeds
– 4 tablespoons of shelled pumpkin seeds, toasted
PREPARATION:
1. Remove the broccoli from the freezer. Bring a pot of water to the boil to blanch the broccoli.
2. Remove the coalho cheese from the skewers and cut it into cubes. Reserve.
3. Blanch the broccoli (see preparation).
4. Wash the lettuce and cabbage. Cut the cabbage into thin strips. Soak in a bowl with sodium hypochlorite solution.
5. Peel and grate the ginger. Wash and peel the carrot.
6. Using a mandolin, slice the cucumber into thin slices (without peeling it) and the peeled carrot into ribbons, lengthwise.
7. Wash the tomato, remove the seeds and cut it, first into quarters and each quarter into thin strips, shaped like canoes.
8. Drain the mushrooms in a bowl, wash them under running water and cut them into quarters.
9. If you haven’t purchased toasted pumpkin seeds, toast them in a non-stick pan.
10. Separate other ingredients and utensils from the recipe.
PREPARATION:
Rainbow Salad – Broccoli – Blanch (do this step during pre-preparation):
1. When the water boils, add salt, add the broccoli florets and cook for 5 minutes.
2. Drain and place in a bowl with ice water to stop cooking and cool.
3. Drain again and set aside.
4. Continue pre-preparation (step 4).
Ricotta sauce:
1. In a bowl, dilute the ricotta with filtered water (see quantities in the ingredients).
2. Add the soy sauce and grated ginger and mix well.
3. Set aside.
Rainbow Salad:
1. Remove the lettuce leaves and cabbage strips from the hypochlorite solution.
2. Wash under running water and dry or spin dry.
3. Start assembling the salad (in a salad bowl or directly on the plates).
4. Tear the iceberg lettuce leaves with your hands and arrange them in the salad bowl or on the plates.
5. Next, place the thin strips of cabbage on top of the lettuce.
6. Continue with the cucumber, tomato, carrot, mushrooms and broccoli, so that the salad is well colored and blended (for reference, see the photo of the assembled dish).
7. Salt and dress the salad with a drizzle of extra virgin olive oil.
Coalho cheese:
1. Grease with a drizzle of olive oil and heat the same non-stick pan you used to toast the pumpkin seeds.
2. When hot, reduce the heat and add the cheese cubes.
3. Continue turning until toasted on all sides.
FINALIZATION AND ASSEMBLY:
1. Spread the hot, toasted coalho cheese cubes over the salad.
2. Season the salad with a little ricotta sauce.
3. Decorate with chia and pumpkin seeds.
4. Serve the rest of the sauce separately.
