Microwave chicken rice recipe

Ingredients:
- 1 1/2 cups uncooked rice, washed and drained
- 3 cups of hot water
- 1 onion chopped
- 2 chicken bouillon cubes
- 1 grated carrot
- 1 large chicken breast, cooked and cut into cubes or strips
- 8 chopped green olives
- 1 can steamed corn and peas
- 1 seedless tomato cut into pieces
- 50 g of grated parmesan
- 1 cup (tea) cottage cheese
- Parsley to decorate
Preparation method:
- In a microwave-safe dish, mix the rice, chicken broth, water, onion and carrot.
- Cover with cling film and make small holes with the tip of a knife to ventilate.
- Cook at maximum power for 10 minutes.
- Remove carefully and check if the rice is soft.
- Add the rest of the ingredients, mix lightly and cook in the microwave at maximum power for another 5 minutes.
