Ingredients for shortcrust pastry with bread
– 14 slice(s) of crustless bread
– 1 and 1/2 cups of milk
– Salt to taste
– pepper to taste
– nutmeg to taste
Ingredients Stuffed with Courgettes and Tomatoes with Ricotta Paste
– 2 large courgettes, cut into slices of approximately 0.5 cm
– 2 tomatoes cut into thin slices
– 2 tablespoons of chopped onion
– olive oil to taste
-400 g of ricotta
– 6 tablespoons of cream cheese (without starch)
– Salt to taste
– pepper to taste
– nutmeg to taste
Ingredients for the topping (whipped eggs)
– 4 units of eggs
– 2 cups fresh cream (or canned cream)
– 2 tablespoons of grated parmesan
– Salt to taste
– pepper to taste
Ingredients To assemble and complete
– 200 g of mozzarella
– 2 tablespoons of grated parmesan
– extra virgin olive oil to taste
– basil to taste (leaves) to decorate
– 1/2 cup(s) basil (leaves) to assemble
PREPARATION:
1. Separate all the ingredients and utensils for the recipe.
2. Clean, chop and cut the ingredients as indicated in the list.
3. Cut the tomato into slices, season with salt and set aside.
4. Pass the ricotta through a sieve.
5. Remove the crust from the bread.
6. Preheat the oven to 180ºC.
PREPARATION:
Stuffing – Courgettes and Tomato:
1. In a non-stick pan, sauté the onion in olive oil for 2 minutes.
2. Add the tomato slices and grill them quickly on both sides, without losing their crunchiness.
3. Season with salt and pepper.
4. Remove from pan and set aside.
5. Place the courgettes in the same pan and grill them carefully so that the slices do not break, until they are lightly golden.
6. Turn and grill the other side.
7. Season with salt and pepper.
8. Turn off the heat and set aside.
Ricotta Pasta:
1. In a bowl, mix the ricotta with the cream cheese.
2. Season with salt, pepper and nutmeg.
3. Set aside.
Garnish (whipped eggs):
1. In another bowl, with a fork or wire whisk, beat the eggs without foaming.
2. Add the cream and beat vigorously to thicken it.
3. Add the grated parmesan.
4. Season with salt and pepper.
5. Set aside.
Seasoned Milk – Bread:
1. Place the milk in a shallow dish and season with salt, pepper and nutmeg.
Bread Cake with Mozzarella, Courgettes and Tomato:
1. If desired, this dish can be assembled into individual refractory dishes. Grease the refractories with olive oil.
2. Dip half the bread slices in the flavored milk and arrange them in the refractory pan(s) until the entire bottom is covered.
3. Then arrange the courgette slices on the bread.
4. Distribute the basil leaves.
5. Cover with sliced mozzarella.
6. Place the tomato slices on top.
7. Carefully roll out the ricotta dough and level it to make it uniform.
8. Make the last layer with the remaining slices of bread soaked in milk.
9. Finally, add the egg topping.
10. Sprinkle with the remaining Parmesan.
11. Bake in a preheated oven at 180ºC for about 20 minutes or until the topping is golden.
ENTRY OR DESSERT:
If you have chosen to prepare an appetizer or dessert, take advantage of the oven time to prepare it.
FINALIZATION AND ASSEMBLY:
1. Remove the cake from the oven and bring it to the table in the baking dish(s), or divide it among the plates if you prefer.
2. Before serving, season with extra virgin olive oil.
3. Decorate with basil leaves.
