- 1 onion chopped
- 1 crushed garlic clove
- 1 seedless Italian courgette, chopped
- Salt and black pepper to taste
- 3 eggs
- 1 tablespoon of water
- Chopped parsley for sprinkling
Preparation method:
- In a greased non-stick pan, brown the onion and garlic
- Add the courgettes and sauté for 4 minutes or until soft
