A delicious blended cake with grated carrots and spices, gluten-free (wheat) and lactose-free (milk).

Ingredients AMERICAN CARROT CAKE GLUTEN-FREE AND LACTOSE-FREE: DRY INGREDIENTS:
– 2 cups of sifted gluten-free flour mix + a little for dusting the pan
– salt to taste (pinch)
– 1 teaspoon of ground cinnamon THE
– nutmeg to taste, grated THE
– 1 cup(s) brown sugar, sifted
– 4 tablespoons demerara sugar
– 1 teaspoon(s) of chemical yeast THE
– 1 teaspoon(s) of sodium bicarbonate ab
Ingredients AMERICAN CARROT CAKE GLUTEN-FREE AND LACTOSE-FREE: INGREDIENTS FOR KNIGHTING:
– 4 units of eggs
– 1 cup(s) oil + a little to grease the pan
– 2 cups carrot, peeled and finely grated.
– 1 cup(s) of almond milk (or other milk of your choice)
Ingredients TO COMPLETE:
– 1/2 cup(s) chopped walnuts (optional)
PREPARATION:
- Separate the recipe ingredients and utensils.
- Grease a round pan with a hole in the center with a drizzle of oil – for 4 portions use a large pan, the cake will have a good yield.
- Preheat the oven to 180°C.
- If you don’t have a mix of gluten-free flours, prepare your own: in this cake the mix contained 10% gluten-free oat flour, 10% corn starch, 40% rice flour and 40% potato starch.
- Sift the dry ingredients into a bowl, except the brown and demerara sugar, baking powder, and baking soda.
- Peel and grate the carrot on the fine side of the grater.
- Chop the walnuts to add to the dough (optional). Leave it in pieces, being careful not to turn it into flour.
PREPARATION:
AMERICAN CARROT CAKE – GLUTEN AND LACTOSE FREE:
- In the blender, beat the egg(s) with the oil, almond milk or other milk of your choice, brown sugar and demerara sugar.
- Transfer the mixture into a bowl and add the remaining sifted dry ingredients. If you haven’t added spices (cinnamon, nutmeg), take this opportunity to add them now.
- Then mix the baking powder and baking soda.
- Add the grated carrot and chopped walnuts (optional). Shake well.
- Place the cake dough in the greased and floured pan.
- Bake in a preheated oven at 180°C for 30 minutes or until the cake is completely cooked. Cooking time may vary depending on the size of the cake you are preparing.
- Check if the cake is cooked: do the toothpick test: if it comes out dry the cake is cooked.
- Remove from the oven, leave to cool for a few minutes.
- When it is cold, turn it out onto a serving plate.
FINALIZATION AND ASSEMBLY:
- Serve the Gluten-free and lactose-free American carrot cake sliced.
- Store at room temperature for up to 3 days.
