A Rio de Janeiro burger restaurant created a version of the sandwich finished with tanajura ants – also known as içá – and it went viral on social media.
The idea to create this burger flavor came from a joke between the snack bar owner and an employee who created the “tanaburguer”.
“Matthew, our waiter, brought the tanajura from Ceará, we tried it and said ‘why not put it on the burger?’. We tried it on the burger, ate it and made the video which is became popular. People started looking, talking about putting it up for sale and we decided to put it up for sale,” Ernandes Mesquita said on Record’s “Domingo Espetacular.”
Traditional in the cuisine of the North and Northeast, the delicacy is rich in protein, but is strange in other regions of the country. The sandwich is prepared with tanajura sautéed with salt, aromatic herbs and pork lard. It also includes breaded cheese, pepper jelly, a beef burger with melted cheese and covered in ants.
Since tanajura appears during rainy and hot periods, shipping from Ceará to Rio is very expensive and can cost up to R$400 per kilo. Nutritionist Maria Clara Pinheiro stated in the article that more than 43% of every 100g of ants is protein.
“It is a food with a very high protein content, which can also be used to formulate supplements or be added to preparations to increase the protein content of a preparation.”
