Carreteiro rice
ingredients
- 1/2 cup chopped bacon
- 1/2 cup chopped pepperoni
- 1 onion peeled and chopped
- 2 cloves of garlic, peeled and crushed
- 1 green pepper, seeded and chopped
- 1/2 cup tea dried meat
- 1 skinless, seeded tomato, chopped
- 2 cups of raw rice tea
- Salt and chopped chives to taste

Preparation method
Dried meat
Clean the dried meat and cut it into small pieces. Place in a container, cover with water and cover with cling film. Refrigerate for 12 hours, changing the water every 4 hours. Then, remove the water, put the meat in the pressure cooker, cover with water and cook over medium heat for 30 minutes after coming to pressure. Turn off the heat, drain the water, wait for it to cool and chop the meat. Reserve.
Rice
Place the bacon and peppers in a pan and fry them over medium heat until golden brown. Add the onion and garlic and sauté until the onion has softened. Add the pepper and tomato and brown for another 5 minutes. Add the dried meat and rice and mix well. Add salt, cover with water and cover the pan. Cook until the water dries up. Turn off the heat, sprinkle with chives and serve immediately.
Farofa with egg
ingredients
- 300 g of cassava flour
- 5 eggs
- 1 teaspoon chopped basil
- 50 g of chopped bacon
- 50g minced pork sausage
- 1 minced pepper sausage
- 3 tablespoons chopped parsley
- 3 tablespoons chopped chives
- 1 onion peeled and chopped
- 1 sachet of seasoning to taste
- 3 cloves of garlic, peeled and chopped
- 1/2 cup oil
- Salt to taste
Preparation method
Place the eggs, salt and seasoning sachet in a blender and blend until smooth. Reserve. In a pan, add the oil and place over medium heat to heat. Add the onion and garlic and sauté until golden brown. Add the pork sausage, pepperoni sausage and bacon and fry until golden brown. Add the beaten eggs and fry well. Finally add the parsley, chives, basil and cassava flour and mix well. Drizzle the farofa and serve immediately.
Garlic sauce
ingredients
- 250ml of milk wholemeal ice cream
- 3 cloves of garlic, peeled and crushed
- Salt, oil and oregano as needed
Preparation method
Add the milk to the blender and blend at maximum speed. Without stopping whisking, add the oil and beat until creamy. Add the garlic, salt and oregano and beat again to combine. Transfer the sauce to a container and serve immediately.

Mayonnaise salad
ingredients
- 250 g of mayonnaise
- 3 potatoes peeled and cut into cubes
- 2 carrots, peeled and cut into cubes
- 280 g canned green corn
- 280g canned peas
- 2 tablespoons chopped chives
- Salt and ground black pepper to taste
- Waterfall
Preparation method
Place the potatoes and carrots in a pan, cover with water and cook over medium heat until soft. Turn off the heat, drain the water and wait for it to cool. Then, in a container, put the potatoes, carrots, corn, peas and chives and mix well. Gradually add the mayonnaise and stir to combine. Season with salt and black pepper and refrigerate for 2 hours. Serve immediately.
Tip: serve garnished with parsley.
Pineapple vinaigrette
ingredients
- 1 pineapple peeled and cut into pieces
- 2 tablespoons peeled and chopped red onion
- 1 teaspoon grated ginger
- 2 tablespoons of olive oil
- Juice of 1/2 lemon
- Salt, parsley and chopped coriander to taste
Preparation method
In a container, place the pineapple and lemon juice and mix well. Add remaining ingredients and stir to combine. Cover with cling film and refrigerate for 1 hour. Serve immediately.
