Courgette caponata

Ingredients:
- 1 cup (tea) olive oil
- 4 crushed garlic cloves
- 1 red seedless chilli, chopped
- 3 courgettes cut into thin strips
- 1/2 cup seedless black raisins
- Salt and chopped mint to taste
Preparation method:
- Place a spoonful of olive oil in a non-stick pan, add the garlic and fry lightly.
- Add the pepper, courgettes, raisins and cook, stirring occasionally, until the courgettes are al dente.
- Remove from the heat, season with salt, mint and the remaining olive oil and refrigerate in a closed container until ready to serve.
