Courgette caponata

Ingredients:

  • 1 cup (tea) olive oil
  • 4 crushed garlic cloves
  • 1 red seedless chilli, chopped
  • 3 courgettes cut into thin strips
  • 1/2 cup seedless black raisins
  • Salt and chopped mint to taste

Preparation method:

  1. Place a spoonful of olive oil in a non-stick pan, add the garlic and fry lightly.
  2. Add the pepper, courgettes, raisins and cook, stirring occasionally, until the courgettes are al dente.
  3. Remove from the heat, season with salt, mint and the remaining olive oil and refrigerate in a closed container until ready to serve.
