One of the best fried foods in the world according to TasteAtlas, coxinha is a true national heritage. A classic bar food, coxinha is a Brazilian snack that, according to legend, came from the hands of a chef for Princess Isabel, who improvised a dish with mashed potatoes and shredded chicken so that Prince Pedro de Alcântara could eat his much love chicken legs in a different way.
To celebrate this national delicacy, we spoke with chefs Tarcisio da Silva, from Padaria Bella Paulista, and Norberto D’Oliveira, from Frangó, about this much-loved delicacy in Brazil.
How to prepare the perfect coxinha?
For Tarcisio da Silva, “what cannot be missing in a self-respecting coxinha is the very soft dough, the juicy filling and that crunch when you bite into it”. There are different types of coxinha, there are no rules! A very democratic snack, it can have different recipes, depending on the customer’s tastes.
For a perfect coxinha, Tarcisio highlights five points: pay attention to the dough, so that it is very smooth and does not stick to your hand; have a very juicy filling and cover it well. Norberto D’Oliveira suggests the choice of quality ingredients, good preparation of the dough to promote creaminess, the use of fresh chicken broth and the golden advice that was unanimous among the chefs: always fry immediately with oil at the right temperature. right, to be served hot, avoiding it burning on the outside and becoming raw inside.
But is Coxinha all the same?
Traditionally, coxinha is prepared with a dough made from wheat flour, water, milk, butter and some seasonings. As a filling, the classic is shredded chicken. However, it has everything. Pepperoni, beef jerky, ham, cheese only, with pastrami, veggies, shrimp and more! With that in mind, we’ve put together a few different recipes for you to try different flavors at home:

Recipe by chef Janaína Rueda, this coxinha uses free-range chicken and can be accompanied by a delicious cream cheese made from fresh cream, semi-hard cheese and cream cheese spread.
Chicken coxinha with catupiry
With shredded chicken breast, chicken broth and original catupiry, this coxinha from the Bella Paulista patisserie is crunchy on the outside and very creamy on the inside.

From the Fornô restaurant, it’s a different coxinha, without pasta, with cream cheese and plenty of shredded pastrami.
