In the Arab Emirate, the Spaniard Dabiz Muñoz offers a journey into his creative universe

At One Za’abeel, an H-shaped building that houses the world’s longest infinity pool, Dabiz’s home promises a hedonistic journey through shareable recipes.
“I don’t think it will be the best restaurant in Dubai and that’s already a triumph,” he admitted. The low expectations stem, in part, from the fact that the experiment itself ended in London. After all, they come from a 27-year-old chef, triple-starred for a decade and elected best chef in the world by The Best Chef Awards for three consecutive years, who feels more human and more at his peak. than ever before.

Forgoing pork (for obvious reasons), croquetas in Dubai are kimchi with tuna sashimi, sea urchin or scallop roe and pickled caviar. Instead of fish’n’chips there are soft crab and adobo chips (a condiment made from paprika, oregano and vinegar) or the unattainable dream of Pringles.
The club sandwich is a black angus bao with cottage cheese, secret cherry sauce and fried wonton dough.
Crazy or not, the fact is that the creations are impressive, otherwise the chef would not occupy the third position in the prestigious ranking The World’s 50 Best Restaurants 2023. Emulating an alley, the new StreetXO may well have been a personal request of the prince of the emirate , however, is above all another showcase of Dabiz’s provocative and borderless cuisine.
