Ingredients for the ground beef carrot pancake:

  • 3 eggs
  • 2 tablespoons of melted butter
  • 2 cups (tea) of milk
  • 1/3 cup of grated carrots
  • 1 teaspoon of salt
  • 2 cups of flour (wheat)
  • butter for greasing
  • 1 cup tomato sauce (tomato sauce)
  • 1/2 cup grated mozzarella

Filling:

  • 2 tablespoons of oil
  • 500 g of minced meat
  • 2 minced garlic cloves
  • 1 diced onion
  • 1 diced seedless tomato
  • 5 tablespoons of pitted green olives, chopped
  • Salt, pepper and chopped parsley to taste

Method of preparation:

Beat the egg, butter, milk, carrot, salt and flour in a blender until smooth. Refrigerate for 30 minutes. For the filling, heat a pan with oil and brown the meat for 5 minutes. Add the garlic and onion and sauté for 2 minutes. Add the tomato, olives, salt and pepper. Mix the green smell and turn off.

Heat a greased non-stick pan and pour in about 1/2 ladle of dough, turning it to distribute it over the entire base. Brown on both sides. Repeat the procedure with the rest of the dough. Put the filling on one end and roll up. Arrange them next to each other in a refractory and drizzle with the sauce. Sprinkle with the mozzarella and bring to a high, preheated oven for 10 minutes or until it has set. to serve.
