Quick and easy homemade beans with bacon to enjoy for lunch

Preparation time: 50 minutes

Ingredients:

  • 500 g of carioca beans
  • 2 bay leaves
  • 1/2 cup diced bacon
  • 1/2 tablespoon minced garlic
  • 1 rib bouillon cube
  • 4 tablespoons chopped chives
  • Salt and black pepper to taste

Preparation method:

  1. In a pressure cooker, over medium heat, place the beans, bay leaf, beetroot and cover with water.
  2. Cover and cook for 40 minutes, from when the pressure starts.
  3. Turn off the heat, wait for the pressure to release naturally and open the pan.
  4. Remove the beetroot without discarding it and set the beans aside.
  5. In another pan, over medium heat, fry the bacon in its own fat until golden brown.
  6. Add the garlic and rib broth.
  7. Fry until the broth dissolves, pour the water over the cooked beans and cook until thickened.
  8. Turn off and sprinkle with chopped chives.
  9. If desired, peel cooked beetroot and serve in salad or with beans.
