cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
Ingredients for wheat-free and dairy-free smoothie cake:
– 3 units of eggs
– 2 cup(s) of chestnut milk (or other milk of your choice)
– 1 cup(s) oil + a little to grease the pan. (or olive oil)
– 3 teaspoons of lactose-free parmesan (optional)
– 2 cups rice flour + a little to sprinkle the pan. (or mix of gluten-free flours)
– Salt to taste
– 3 teaspoons of chemical yeast bv
CHICKEN STUFFING Ingredients
– 2 cup(s) of chicken filling already prepared without starch (SEE RECIPE)
– pitted green olives to taste (or green olives)
Ingredients TO COMPLETE:
– 1 and 1/2 tablespoons of grated lactose-free parmesan, or as desired. (optional)
PREPARATION:
- Separate the utensils and ingredients for the recipe.
- For 4 portions, use a 22cm baking tray (square or round), line it with baking paper, grease it and sprinkle a little rice flour.
- Prepare the chicken stuffing (see recipe here) or use shredded leftover chicken. If you prepare the filling according to our recipe, do not add corn starch, simply let the filling dry or filter it to remove excess cooking liquid.
- Remove the stones from the olives and cut them into slices. Mix with chicken filling.
- Grate the parmesan, if you didn’t buy it grated. Reserve a portion to put on top, if desired.
- Preheat the oven to 180°C.
PREPARATION:
Basic blended cake dough (wheat-free and dairy-free):
- Place the egg(s), vegetable milk, oil or olive, salt, lactose-free parmesan (optional) and rice flour into the blender. Beat until a homogeneous mass forms.
- Turn off the blender and add the yeast.
- Reserve.
Blender Chicken Pot Pie (Wheat-Free and Dairy-Free):
- Pour half the mixture into the lined and greased pan, filling the entire bottom.
- Then distribute all the filling.
- Cover with the rest of the dough and level, lightly tapping the mold on the surface.
- Sprinkle dairy-free parmesan on top (optional).
- Place in the preheated oven at 180°C and cook for 45-50 minutes or until completely cooked.
- To make sure the cake is cooked, test with a toothpick by inserting it into the center of the cake and, if it comes out clean, it is ready.
FINALIZATION AND ASSEMBLY:
- Unmold the Wheat-free, dairy-free blended chicken pot pie on a serving plate.
- Serve hot or at room temperature.
