CAKE WITHOUT EGGS Ingredients
– 4 large apples, unpeeled, cut into cubes
– 1/2 cup(s) of orange juice
– 1/2 cup(s) brown sugar (or demerara sugar)
– salt to taste (pinch)
– 1/2 cup(s) cracked walnuts
– ground cinnamon to taste In
– 1/2 cup(s) oil + a little to grease the pan
– 1/2 cup(s) gluten-free oat flour (or gluten-free oat bran)
– 1 tablespoon(s) of chemical yeast In
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Preheat the oven to 180°C.
- For 1 recipe, consider 4 portions and use a 25 cm diameter baking pan.
- Grease a mold with oil, preferably with a removable edge, to facilitate demoulding.
- Wash the oranges, squeeze the juice and place it in the bowl in which you will prepare the cake.
- Coarsely chop the walnuts.
- Wash the apples, do not peel them, remove the seeds and cut them into cubes and mix them with the juice in the bowl.
PREPARATION:
CAKE WITHOUT EGG:
- In the bowl with the juice and apples, add the sugar, salt and mix.
- Then add the cinnamon, walnuts and oil and mix again.
- Sift the oat flour or gluten-free oat bran, a little at a time, directly over the apples, incorporating until smooth.
- Add the chemical yeast and mix.
- Transfer it to the greased baking tray and place it in the preheated oven at 180°C.
- Cook for about 50 minutes, or until the apples are cooked.
- Do the toothpick test: place the toothpick in the center of the cake, it should still come out a little moist, but without any raw dough.
- Remove the cake from the oven and allow it to cool completely – while hot it becomes brittle – it must be completely cold to handle.
FINALIZATION AND ASSEMBLY:
- Remove the rim from the mold and invert it onto a plate. Serve at room temperature.
- If you prefer, when serving, cut the eggless cake sliced, distribute on plates and heat slightly in the microwave (optional) and accompany with a scoop of ice cream of your choice.
