Gizzards in vinaigrette recipe

Preparation time: 30 minutes

Performance: 4 servings

Difficulty level: easy

Ingredients:

  • 1 kg of clean gizzard
  • 1 chicken bouillon cube
  • 1/2 cup (tea) olive oil
  • 1 clove of minced garlic
  • 2 chopped onions
  • 3 diced seedless tomatoes
  • 1/2 cup white wine vinegar
  • 2 tablespoons chopped parsley
  • Salt and black pepper to taste

Preparation method:

  1. Cut the gizzards in half and place in the pressure cooker with the chicken stock.
  2. Cover with water and pressure cook for 15 minutes once it starts to sizzle.
  3. Remove the pressure, open the pan, drain.
  4. In a pan, over medium heat, heat the olive oil and fry the garlic for 2 minutes.
  5. Add the onion and tomato.
  6. Fry briefly and add the gizzards, vinegar and parsley.
  7. Season with salt and pepper and serve immediately.
