  • 1 slice of sliced ​​Calabrian sausage
  • 200 g of diced bacon
  • 1.5 kg of ribs of beef, cut into pieces
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 chopped tomato
  • 3 tablespoons of tomato paste
  • 4 cups of hot water (tea)
  • 2 cubes of beef broth
  • 600 g cassava, cut into pieces
  • Salt and chopped chives to taste

Method of preparation

Heat the oil in a large pressure cooker over medium heat and fry the peppers and bacon until golden brown. Drain with a slotted spoon and set aside. In the same pan, put the rib, onion, garlic and saute until golden brown. Add the tomato, remove and brown for 3 minutes. Add the water, the meat broth, cover the pan and cook for 25 minutes after the pressure starts. Switch off, let the pressure release and open the pot. Add the cassava, peppers and bacon set aside and, if necessary, add more water. Season with salt and chives, cover and cook for another 25 minutes after the pressure starts.
