- 2 sweet potatoes, peeled and cut into cubes

Preparation method

Sweet potatoes stuffed with feta and spinach
ingredients
- 2 orange sweet potatoes
- 1 cup feta cheese
- 1 cup chopped and sautéed spinach
- Olive oil, rosemary, salt, ground black pepper and nutmeg to taste
Preparation method
Cut the sweet potatoes in half, place on a baking sheet, drizzle with olive oil and cover with aluminum foil. Bake in preheated medium oven until soft. In a bowl, mix the feta with the spinach, salt, rosemary, nutmeg and black pepper. Remove part of the potato pulp with a spoon and fill it with the cheese and spinach filling. - 3 sweet potatoes, peeled and cut into cubes
- 200 g of chickpea cooked
- 1 onion chopped
- 2 cloves garlic, minced
- 1 l of vegetable broth
- 1 teaspoon cumin
- Salt, olive oil and ground black pepper to taste
Preparation method
In a pan, heat the oil over low heat and fry the onion and garlic until golden. Then add the sweet potatoes, chickpeas, cumin and vegetable broth and raise the heat to medium. Season with salt and pepper. Cook until sweet potato is tender. Then transfer the mixture to the blender and blend until it reaches a creamy consistency. Return the soup to the pan and heat over medium heat. Serve immediately.
