Bread ice cream on the griddle? Find out where to find the flavors of baked delicacies


Pastry chefs bet on new dessert flavors and pay homage to the traditional delicacies of bakeries in the capital of São Paulo




For the inhabitants of São Paulo it is customary to go to the bakery counter, at any time of the day, and order the classic: “A loaf of bread with drippings, please!”. If you’re not the one in the scene, you’ve probably seen someone make this request.

Inspired by this Sao Paulo custom, the pastry chefs created desserts, ice creams and chocolates inspired by the most famous delicacies of the Padocas.

Lida, an artisan bakery, has launched grilled bread ice cream. “She has everything to do with Lida,” Carolina Arantes, the bakery’s partner and official ice cream maker, told Paladar.

The recipe is made with homemade bread (wheat, water and salt), the slices of which end up in the pan with the butter and then infuse the milk which will become frozen.

“In the first attempt I kept some pieces of this bread on the plate in the dough, but it didn’t work, they crystallized in the freezer. Now I infuse the milk overnight, filter it and blend the ice cream. Then, I increase this dough with toast powder, really well toasted, to the point of turning black,” he said.

Grilled bread ice cream has the counterpoint of the salt of the butter and a little of the bitterness of this powder. It is one of the most popular flavors in pastry shops.
