Steak with barbecue sauce
ingredients
Meat
- 400 g of rump cut into steaks
- 1 teaspoon olive oil
- Salt to taste
Sauce
- 2 tablespoons of ketchup
- 2 chopped tomatoes
- 1 teaspoon of English sauce
- 1 teaspoon white vinegar
- 1 onion peeled and chopped
- 1 clove of garlic, peeled and crushed
- 1 teaspoon of brown sugar
- Cloves and ground white pepper to taste
- 1 cup of water
Preparation method
Meat
In a pan, add the olive oil and place over medium heat to heat. Meanwhile, in a container, season the steaks with salt and add them to the pan. Grill the meat and leave it rare. Turn off the heat and set aside.
Sauce
In the same pan as the steak, add all the sauce ingredients and cook over medium heat, stirring constantly, until the sauce has reduced. Beat the sauce with a mixer until smooth. Turn off the heat, place the pieces of steak onto a plate and pour the sauce over it. Serve immediately.
Minced beef with Madeira sauce
ingredients
Meat
- 200g minced beef muscle
- 1 clove of garlic, peeled and crushed
- 1 onion peeled and cut into slices
- 1/5 tablespoon olive oil
- Salt, thyme, chopped parsley and ground black pepper to taste
Sauce
- 2 tablespoons butter
- 40 g of wheat flour
- 60 ml of Madeira wine
- 560 ml of meat broth
- 1 tablespoon of mustard
- Salt and cut the mushrooms to taste
Preparation method
Meat
Place the pieces of meat in a container and season them with garlic, salt and black pepper. Let it rest for 10 minutes. Meanwhile, in a pan, add the olive oil and place over medium heat to heat. Add the meat and brown it. Add the onion, thyme and parsley and mix well. Cook for another 4 minutes. Turn off the heat and set aside.
Sauce
In a pan, place the butter and place it over medium heat to melt. Add the wheat flour and cook until golden brown, stirring constantly. Gradually add the Madeira wine, the meat broth, the salt, the mustard, the mushrooms and cook until thickened, stirring constantly. Turn off the heat, add the sauce to the reserved meat and mix well. Serve immediately.

Hard thigh with tomato sauce
ingredients
- 3 tablespoons of olive oil
- 2 onions peeled and chopped
- 5 cloves of garlic, peeled and crushed
- 1 kg of hard leg cut into cubes
- 340 g of tomato sauce
- 3 chopped tomatoes
- 1 tablespoon paprika
- 100g potatoes, peeled and cut into slices
- 100 g carrots, peeled and cut into slices
- Salt, chopped green chilli and ground black pepper to taste
Preparation method
In a pressure cooker, add the olive oil and heat over medium heat. Add the onion and garlic and brown them. Add the tomatoes, tomato sauce, meat, chives, paprika, salt and black pepper, mix and cover the pan. Cook for 20 minutes after coming to pressure. Then turn off the heat and wait for the pressure to release. Open the pan, place the carrots and potatoes. Cover and return to medium heat for another 15 minutes. Turn off the heat and serve immediately.
Beef with white sauce
ingredients
- 500 g of beef cut into strips
- 1 onion peeled and chopped
- 1/2 liter of milk
- 1 tablespoon butter
- 100 g of Gorgonzola chopped
- 2 tablespoons cornstarch
- Salt and ground black pepper and olive oil to taste
Preparation method
In a pan, add the olive oil and place over medium heat to heat. Add half the onion and brown it. Add the meat and brown it until it loses its reddish color. Season with salt and pepper. Turn off the heat and set aside. Place the cornstarch and milk in a container and mix until completely dissolved. Reserve. In a pan, place the butter and place it over medium heat to melt. Add the rest of the onion and brown it. Add the cheese and cornstarch mixture and cook until thickened, stirring constantly. Turn off the heat, pour the sauce over the meat and serve immediately.
Filet mignon with mustard sauce
ingredients
- 10 fillet mignon
- 1/2 cup beef broth
- 250 g of milk cream
- Salt, ground black pepper, chopped parsley, mustard and butter to taste
Preparation method
Arrange the fillets in a container and season with salt and black pepper. Cover and let rest for 10 minutes. In a pan, add the butter and place over medium heat to melt. Place the fillets in the pan and brown them on both sides. Turn off the heat, remove the meat from the pan and set it aside. In the same pan, add the meat broth and stir in the remaining butter. Add the cream and mustard and mix until you obtain a smooth consistency. Season with salt and sprinkle with parsley. Pour the sauce over the fillets and serve immediately.
