Ingredients CORN AND FUBÁ CAKE

– 1 can(s) of pre-cooked green corn

– 200 ml of coconut milk

– 1 can(s) of condensed milk

– 3 units of eggs

– 1/2 cup(s) of corn flour

– 100 g of unsweetened dehydrated coconut

– 1 tablespoon(s) of chemical yeast THE

Ingredients FOR GREAKING

– oil to taste

PREPARATION:

  1. An entire recipe corresponds to a portion for 4 people. Use a 22cm round pan with a hole in the center for a tall cake or a 26cm pan if you want a shorter cake.
  2. Separate the utensils and ingredients for the recipe.
  3. Grease the pan with oil
  4. Preheat the oven to 180°C.

PREPARATION:

Corn cake and corn flour (dough preparation):

  1. In a blender, place the eggs, drained canned corn, coconut milk and condensed milk.
  2. Beat well until the corn is well mashed.
  3. Turn off the blender and transfer the cake batter to a bowl.
  4. Sift the corn flour directly onto the dough and mix.
  5. Add the grated coconut and mix well.
  6. Finally add the yeast and mix again.

Corn and cornmeal cake (baking):

  1. Transfer the dough to the greased pan.
  2. Place in a preheated oven at 180°C and cook for 45 minutes, the time may vary depending on the height of the cake.
  3. Test with a toothpick or fork, insert it into the center of the cake and if it comes out clean, it is cooked.
  4. Remove from the oven, shake the pan a little to see if it loosens and let it cool without removing it.

FINALIZATION AND ASSEMBLY:

  1. Unmold and transfer corn cake and cornmeal on a serving plate and serve in pieces.
  2. Store at room temperature.
