Carreteiro rice
ingredients
- 1.5 kg of dried meat, cut into cubes
- 2 onions peeled and chopped
- 1 green pepper, seeded and chopped
- 6 cloves of garlic, peeled and chopped
- 5 cups of tea rice
- 10 cups boiling water
- Olive oil and chopped green chilli to taste
- Water to cook the dried meat
Preparation method
In a pan, place the jerky, cover with water and heat over medium heat until boiling. Then change the water and put it back on the heat, repeating the process until the amount of salt is pleasant. Turn off the heat, drain the water and set aside.
In a pan, add the olive oil and place over medium heat to heat. Add the dried meat and fry until golden brown. Add the onion, garlic and pepper and sauté. Add the rice and sauté until it begins to shimmer. Add boiling water and cook until dry. Turn off the heat, sprinkle with green chillies and serve immediately.
Pine nut paçoca with roast meat
ingredients
- 1 kg of cooked pine nuts
- 1kg of meat beef roasted and cut into cubes
- 1 kg of pork loin, roasted and cut into cubes
- 500 g sausage, roasted and cut into cubes
- 1 onion peeled and chopped
- 2 cloves of garlic, peeled and chopped
- 200 g of Bacon
- Salt, olive oil and ground black pepper to taste
Preparation method
Place the pine nuts, beef, loin and sausage in the food processor and chop well. Reserve. In a pan, add the olive oil and place over medium heat to heat. Add the onion, garlic and bacon and brown. Season with salt and pepper. Add the chopped mixture and fry until golden brown. Serve immediately.
Gaucho cheese
ingredients
- 1 x Hamburger Bun
- 2 tablespoons green corn
- 2 tablespoons of peas
- 120 g of beef cut into strips
- 1 egg
- 10 g of mayonnaise
- 2 slices of mozzarella
- 2 lettuce leaves
- 4 slices of tomato
- Salt and ground black pepper to taste
- Fry oil
Preparation method
Place the meat in a container and season it with salt and black pepper. Reserve. In a pan, add the oil and place over medium heat to heat. Place the meat on top and fry until it reaches the desired doneness. Transfer the meat into a container and, in the same pan, add a little more oil and heat. Add the egg, brown and season with salt. Turn off the heat and set aside. Using a knife, cut the bread in half, spread the mayonnaise on top, fill with the meat, egg and the rest of the ingredients and serve immediately.

Ambrosia
ingredients
- 395 g of condensed milk
- 1/2 l of milk
- 4 egg yolks
- 4 egg whites, beaten
- Cloves and cinnamon sticks to taste
Preparation method
In a wide-bottomed saucepan, add the condensed milk and milk and stir until diluted. Cook over medium heat until boiling. Turn off the heat and set aside. Place the egg whites, egg yolks and milk in a pan and mix. Add the cloves and cinnamon and cook over medium heat for 30 minutes. Then, stir gently to break the candy into pieces. Remove from the heat and, using a slotted spoon, place the sweets in a glass jar. Sift the remaining syrup in the pan over the jam. Let it cool and put it in the fridge to harden. Serve immediately.
Galeto
ingredients
- 1 kg of chicken
- 250 g of cheese Grated Parmesan cheese
- 2 cloves of garlic, peeled and crushed
- 200 ml of dry white wine
- Salt, saffron, apple cider vinegar, rosemary and sage to taste
Preparation method
Place the chicken on a baking tray and drizzle with vinegar, stirring to incorporate all parts. Add the garlic, white wine and seasonings. Mix, cover with cling film and leave to rest for 4 hours. Then remove the film, sprinkle with cheese and bake in a preheated oven at 180°C until golden. Serve immediately.
