Ingredients PUNCHED SWEET POTATOES IN THE AIRFRYER
– 1 unit(s) of sweet potatoes
– unsalted butter to taste (optional) – for brushing (or olive oil)
– sweet paprika to taste (optional) THE
– Salt to taste
PREPARATION:
- Start by cooking the sweet potato(s) (see preparation).
- Set aside the other ingredients and utensils for the recipe.
- Sprinkling or brushing the sweet potatoes with a light layer of fat helps them create a crispier skin, while adding more flavor to the preparation, however this technique is not mandatory and can be roasted without fat.
- If you prefer to use shortening, while the potatoes cook, place the butter (optional) in a non-metallic bowl and heat it in the microwave for 20 seconds to melt.
- Stir the paprika (optional) into the melted butter or olive oil and set aside.
PREPARATION:
Sweet Potatoes – Cooking:
- Wash the sweet potatoes, without removing the peel.
- Cut them into slices 2-3 cm thick.
- Place the slices in a pan, cover with water and salt.
- Place over a high heat and when it boils, lower it to a medium heat and cook for about 25 minutes or until the potato is soft, without falling apart.
- Drain well.
Sweet potatoes pounded in the Airfryer:
- Preheat the Airfryer to 180°C for approximately 5 minutes
- Arrange the potato slices in the basket with the skin facing up.
- Using a vegetable masher, lightly mash the slices so that the potato flesh is exposed on both sides of the peel.
- Brush (optional) the potatoes lightly with melted butter or olive oil, mixed with paprika (optional).
- Place the basket in the Airfryer and close the drawer.
- Cook for about 20 minutes or until the potatoes are crisp and golden on the outside.
- Remove from Airfryer.
FINALIZATION AND ASSEMBLY:
- Reorder the sweet potatoes placed in the Airfryer on a serving plate or, if you prefer, distribute it on plates next to your main course.
