Ingredients BEAN BROTH
– 1 1/2 cups pre-cooked black beans, with broth. – or check the preparation method for the quantity of raw beans
THE
– 40 g smoked pepper sausage, roughly chopped (or bacon)
– 3 tablespoons of chopped onion
– 1 clove(s) of garlic
– 1/4 piece(s) chili pepper, seeded, chopped (optional)
– 1 unit(s) of laurel
– olive oil to taste for the sautéing (or oil)
– water to taste, boiling if necessary
– Salt to taste
Ingredients TO SERVE:
– smoked pepper sausage to taste, diced (or bacon)
– chopped parsley to taste (or coriander)
PREPARATION:
- This recipe indicates the quantity of already cooked beans to serve the broth as an appetizer. If you prefer to start by cooking the beans, use ½ cup raw beans to make 1 ½ cups cooked beans (adjust quantities based on number of servings).
- If you prefer to serve as a single dish, double the quantities indicated in the recipe.
- Separate the ingredients and utensils for the recipe.
- Put a kettle of water on to boil.
- Peel the garlic clove and onion and chop them.
- Wash the pepper, remove the seeds and chop it.
- Remove the skin from the sausage or the skin from the bacon and chop the quantity needed for the stock and cut a few cubes for finishing.
- Place the diced sausage or bacon in a pan, brown and toast, without burning, to add when serving the broth.
- Wash and dry the parsley or coriander, chop them and set aside on absorbent paper.
PREPARATION:
Bean soup:
- In a pan, over medium heat, brown the smoked sausage or chopped bacon in a drizzle of oil or olive oil until golden brown.
- Add the onion and sauté until it becomes transparent.
- Add the bay leaf, chilli pepper and chopped garlic clove and continue to fry for another minute.
- Add the cooked beans with the broth and mix.
- Bring to the boil and season with salt and pepper.
- Cook for a few minutes to let the flavors blend.
- Turn off the heat and remove the bay leaf.
- In a pan, with a mixer or in a blender, beat, gradually adding boiling water until the desired consistency is obtained.
- When it is smooth, put the mixture back in the pan and cook for a few more minutes to enhance the flavours.
- Adjust the seasoning (salt and pepper) and turn off the heat.
FINALIZATION AND ASSEMBLY:
- Distribute the Bean soup in deep bowls or plates.
- Finish with cubes of sausage or bacon and chopped parsley or cilantro.
- Serve as an appetizer or as an entrée in a meal.
