Traditional farofa with bacon
Time: 20 minutes
Performance: 8 servings

Ingredients:
- 2 tablespoons of olive oil
- 4 tablespoons butter
- 100 g of chopped bacon
- 1 onion chopped
- 2 cloves garlic, minced
- 1/2 chopped red chilli
- 1/2 chopped green pepper
- 1/2 can drained peas
- 1/2 can drained corn
- 2 cups chopped cooked chicken
- 1/2 cup sliced green olives
- 2 cups (tea) cornmeal
- 2 cups cassava flour
- Salt and chopped green chilli to taste
- Potato straw to taste for dusting
Preparation method:
- Heat a pan with olive oil and butter over medium heat and fry the bacon for 2 minutes.
- Add the onion, garlic, peppers, peas, corn and chicken and sauté for 3 minutes.
- Add the olives, flour, salt and green chillies, mix and turn off the heat.
- Transfer to a serving platter and sprinkle with potato straw to serve.
Garlic mayonnaise

Time: 20 minutes
Performance: 5 servings
Difficulty: easy
Ingredients:
- 1 egg
- 1 egg yolk
- 2 cloves garlic, minced
- Salt to taste
- 2 tablespoons lemon juice
- 1 cup oil (corn, soybean, canola, sunflower)
- Zest of the peel of 1 lemon
Preparation method:
- Place the egg, egg yolk, garlic, salt and lemon juice in a blender.
- Press the pulse button only to mix.
- Keep the device turned on and then drizzle the oil through the top opening until it thickens.
- Turn off the heat, add the zest and serve immediately with appetizers, rusks, biscuits and bread in general.
- Store covered in the refrigerator for up to 1 day.
Vinaigrette sauce

Time: 5 minutes (+30 minutes rest)
Performance: 10 servings
Difficulty: easy
Ingredients:
- 2 medium onions chopped
- 5 chopped tomatoes
- 1 green pepper chopped
- 1/2 cup chopped green chili pepper
- 1/2 cup chopped green olives
- Salt and black pepper to taste
- 1 cup (tea) olive oil
- 1/2 cup vinegar (tea).
- 1/2 cup (tea) water
Preparation method:
- In a bowl, mix all the ingredients well and leave to rest for 30 minutes before serving.
Chicken salad

Time: 10 minutes (+30 minutes in the fridge)
Performance: 4 servings
Difficulty: easy
Ingredients:
- 2 cups cubed cooked chicken breast
- 1/2 cup chopped celery
- 1/2 cup chopped yellow bell pepper
- 1 onion chopped
- 1/2 cup grated carrot
- 1 cup unpeeled apple (diced)
- 1/2 cup seedless white raisins
- 1/2 cup chopped parsley
- 1/2 cup (tea) olive oil
- Salt to taste
- 1 cup milk mayonnaise
- 1 cup potato straw
Preparation method:
- In a bowl, mix all the ingredients except the straw potatoes.
- Store in the refrigerator for 30 minutes.
- Arrange on a serving plate and distribute the potatoes in straw around the sausage just before serving.
- Serve immediately.
Homemade pepper sauce

Time: 3 minutes
Performance: 1 serving
Difficulty: easy
Ingredients:
- 2 seeded chillies, chopped
- 1 clove of unpeeled garlic
- 1/2 chopped onion
- 4 tablespoons of tomato paste
- 1/2 cup (tea) white vinegar
- 1/2 cup (tea) oil
- 1 tablespoon oregano
- 1 teaspoon of sugar
- Salt to taste
- 1 pinch of ground cinnamon
- 1 pinch of clove powder
Preparation method:
- Blend all the ingredients in the blender until a smooth sauce forms.
- Transfer to a gravy boat and serve immediately with your treats, snacks and meals or keep covered in the refrigerator until ready to serve.
Tip: You can consume this sauce within 7 days if stored in the refrigerator in a tightly covered container.
