PAN RICE CAKE Ingredients
– 1 1/2 cups cooked rice
– 2 units of eggs
– 2 cups of grated parmesan
– 1 teaspoon unsalted butter + a little for browning
– pepper to taste (optional) THE

PREPARATION:
- Separate the ingredients and utensils for the recipe.
- The yield of this recipe is 1 rice cake in a pan per person, with a diameter of 18 cm.
- Crack the egg(s) into a bowl and beat lightly with a fork, just to combine.
- If you didn’t buy pre-grated cheese, grate it on the fine side of the grater.
- Wash and dry the parsley and spring onion, chop them and set them aside on absorbent paper.
PREPARATION:

- Place the cooked rice, beaten egg(s), grated parmesan, butter, chopped parsley and chives in a bowl and mix.
- Season with salt and pepper and mix again.

- Put some butter in a small non-stick pan.
- Heat over low heat until melted and rotate the pan to grease the entire bottom, without excess.
- Spread the rice mixture, pressing with a spatula so that it fills the entire pan and leveling it, leveling the height and leaving it at a thin thickness.
- Cook for about 3-5 minutes to brown the bottom.
- Slide the rice ball onto a cutting board or plate, cover with the pan and flip.
- Return the pan to medium heat and cook until the other side is browned.
- Repeat the steps until the end, adding a little more butter with each addition of dough.
FINALIZATION AND ASSEMBLY:
