Grain-free, low-carb baked kibbeh: convenient and healthy


Low-carb, wheat-free baked kibbeh is light, healthy, and very easy and convenient to prepare.




A well-seasoned and tasty, wheat-free, low-carb kibbeh with cauliflower

Baked Kibe Ingredients (Low Carb)

– 700 g of duckling (or anything else of your choice)

– 350 g of fresh processed cauliflower

– 6 tablespoons of chopped onion

– 1 clove(s) of garlic

– 2 teaspoons lemon (zest)

– 2 teaspoon(s) of Syrian pepper B

– 2 tablespoons of chopped mint

– nuts to taste (optional) (or Brazil nuts)

– 1 tablespoon(s) unsalted butter + a little for greasing

– Salt to taste

Ingredients to accompany

– lemon to taste, cut into quarters

PREPARATION:

  1. Remove the minced meat from the refrigerator and keep it at room temperature while you prepare the other ingredients: the meat cannot be cold.
  2. Separate the ingredients and utensils for the recipe.
  3. Preheat the oven to 220°C.
  4. Peel the onion and garlic clove and chop them finely.
  5. Wash and dry the mint and chop it.
  6. If you opt for walnuts or Brazil nuts, chop them coarsely – they should be visible in the kibbeh dough.
  7. Grease a rectangular baking dish or a baking dish with high sides with butter.

PREPARATION:

Cauliflower:

  1. Wash the cauliflower under running water and divide it into very small florets.
  2. Place in the blender and blend until you obtain rice-like grains.
  3. Reserve.

Baked Kibe (Low Carb):

  1. Place the minced meat, cauliflower grains, chopped onion and garlic in a bowl and mix well.
  2. Season with salt and pepper and mix again.
  3. Add the mint, lemon zest, and walnuts or Brazil nuts (optional).
  4. Knead well, with your hands, until a smooth dough forms: this helps activate the collagen in the meat and prevents the kibbeh from breaking during cooking.
  5. With wet hands, spread the kibbeh dough into the baking or greased pan, pressing gently to fill the entire pan evenly.
  6. Smooth the surface to make the kibbeh even.
  7. With a sharp knife, score the surface of the raw kibbeh, forming diamond shapes.
  8. Cut the cold butter into cubes and distribute it on the kibbeh.
  9. Cook in a preheated oven at 220°C for about 30 minutes or until the meat is well cooked and starts to come away from the edges, taking care not to let it dry out.

FINALIZATION AND ASSEMBLY:

  1. Serve the Low carb baked kibbeh in the refractory pan(s), if you prefer, cut it into squares and distribute it on the plates.
  2. Accompany with the lemon cut into quarters.
