Homemade tomato sauce – canteen recipe, under pressure – faster and easier, with real tomatoes




A rich homemade sauce with real tomatoes, just like the one made in Italian wineries, but faster

Recipe for 4 people.

1 cutting board(s), 1 pressure cooker, 1 colander(s) (or vertical food mill), 1 kettle, 1 potato peeler (optional)

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients for homemade pressed tomato sauce:

– 1 kg of very ripe Italian tomato(s).

– 1 cup(s) carrot, peeled and diced

– 2 cloves of garlic, chopped

– 2 bay leaves

– 2 sprigs of basil

– 2 celery stalks of 7 cm each

– 4 tablespoons of tomato paste ABC

– 1 L of boiling water

– olive oil to taste (or oil)

– Salt to taste

PREPARATION:

  1. Put a kettle of water to boil (see quantities in the ingredients).
  2. Separate the ingredients and utensils for the recipe.
  3. Wash the tomatoes, cut them into quarters and remove the stem and seeds.
  4. Wash and peel the carrot and cut it into cubes.
  5. Wash and peel the garlic clove and chop it coarsely.
  6. Wash the celery stalk(s) and chop coarsely.
  7. Wash the basil sprig(s) and leave them whole.

PREPARATION:

Homemade pressure tomato sauce – cooking:

  1. Water a pressure cooker with olive oil or oil, so that it lightly covers the entire bottom.
  2. Arrange the tomatoes, carrots, chopped garlic, celery, bay leaf, basil and tomato paste.
  3. Add the salt and cover with boiling water.
  4. Cover the pan and place it over high heat.
  5. When the pressure comes to bear, lower the heat to medium and cook for about 20 minutes.
  6. Turn off the heat and let the pressure release.

Homemade pressure tomato sauce – finishing:

  1. Open the pan and check if the tomatoes and carrots are very soft, if necessary put it back on the heat and cook a little longer.
  2. Remove the bay leaf(s) and basil sprig(s).
  3. If you want a rustic sauce, mash it in a pan using a food mill until it reaches the consistency you desire.
  4. If you prefer a smooth sauce, pass it through a sieve – do not blend it in the blender to avoid the color turning orange.
  5. Return the pan to low heat and check the salt.
  6. Let it cook a little longer until the sauce has reached the desired consistency.
  7. Turn off the fire.
