Recipe for 4 people.

Ingredients for Oriental Pork Chops – Marinade:

– 1.5kg pork chops

– 1/2 cup(s) sake mirin

– 4 tablespoons of light soy sauce

– 2 oranges (juice)

– 1 cup(s) of honey

– coarse salt to taste (for the parrilla)

– pepper to taste

Oriental Pork Rib Ingredients – Sauce:

– 500 ml of broth from the bottom of the pan, filtered + a little, to dilute the corn starch and give it consistency

– 1 and 1/2 tablespoons of corn starch, diluted

– toasted sesame oil to taste (drops)

– 1 dessert spoon(s) of oyster sauce

Ingredients TO DECORATE:

– chopped parsley to taste (or green onions)

PREPARATION:

  1. The ribs used in the recipe are strip ribs, but could be pork ribs.
  2. Start by marinating the pork chops (see preparation).
  3. Set aside the other ingredients and utensils for the recipe.
  4. Wash and dry the parsley or spring onion, chop them and set them aside on absorbent paper.

PREPARATION:

Oriental Pork Chops – Marinate (do this step before starting pre-prep):

  1. Clean the pork chops of all visible fat and divide them into strips (each strip = 1 bone).
  2. In a baking dish, mix the sake mirin, soy sauce, orange juice, honey, coarse salt and pepper.
  3. Dip the ribs in the marinade and rub the seasoning well over the entire surface.
  4. Cover with aluminum foil and place in the refrigerator for at least 2 hours.

Oriental Pork Chops – Roast:

  1. With 10 minutes left until the marinade is finished, preheat the oven to the minimum temperature and leave the door ajar, if necessary, in the gas oven or set to 140ºC in the electric oven.
  2. Remove from the refrigerator and place in a preheated oven at 140°C, covered with aluminum foil, for approximately 1:45h or until soft, without falling apart.
  3. Remove the rib from the oven and increase the temperature to 180°C.
  4. Remove the aluminum foil, remove the sauce that has formed in the pan and put the meat back in the oven.
  5. Continue cooking until golden brown, about 30-40 minutes.
  6. Turn halfway through cooking to brown on both sides.
  7. In the meantime, prepare the sauce.

Oriental Pork Chops – Sauce:

  1. Using a sieve, filter the sauce that formed in the pan (measure the quantity needed for the recipe and keep the rest aside) and place it in a pan.
  2. Place the pan over medium heat and bring to a boil.
  3. In a bowl, dilute the cornstarch in a little water or a little reserved broth.
  4. Slowly pour in the diluted cornstarch, stirring to combine.
  5. Continue stirring until the sauce thickens to a thick peak of honey, running out in a stream. If necessary, add a little more corn starch or a little more filtered broth.
  6. Add the toasted sesame oil (drops) and adjust the seasoning.
  7. Add oyster sauce (optional).
  8. Leave warm in a bain-marie.

Oriental Pork Chop:

  1. When the rib is golden, remove it from the oven.
  2. Wrap it in aluminum foil and set aside on a serving plate.

FINALIZATION AND ASSEMBLY:

  1. To serve, dip the oriental pork rib in the sauce.
  2. Remove from the sauce and complete with chopped parsley or chives.
  3. Bring the rest of the sauce to the table to accompany.
