ingredients
- 1 kg of cooked and mashed pumpkin (can be used in the mixer or blender)
- 500 g diced or chopped chicken breast
- 1 onion chopped
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- Chicken broth (from cooking the chicken)
- Salt and pepper to taste
- Fresh coriander leaves for garnish (optional)
Preparation method
In a large pan, sauté half the onion and garlic in a drizzle of olive oil until golden brown. Add the chicken and brown lightly. Add enough water and cook until soft. Save the cooking water. In a pan, brown the garlic and onion and add the chicken. Add the cooked and mashed pumpkin, ginger and chicken broth (chicken cooking water). Season with salt and pepper to taste.
