Ingredients:
- 1 1/2 cups couscous
- 3/4 cup water
- 300g pork belly
- 200 g of green beans
- 1/3 cup bottled butter
- 1 red onion
- 1 bunch coriander/green chilli
- salt
Preparation method:
Start by hydrating the couscous with water and a pinch of salt. Let it rest for about 10 minutes and then transfer it to the couscous pan for about 15 minutes. Cut the pork belly into medium cubes, season with salt and place in a cold pan over a low heat, stirring occasionally until it starts to brown and release all the fat. Then drain the fat, return it to the pan and brown until crispy. Cook the green beans in salted water until they turn grey. In a bowl, add the chopped red onion and spring onion and mash them with your hands. Then add the cooked couscous, beans, cracklings and bottled butter.
