A creamy homemade cream cheese to be made with powdered milk, without additives and preservatives, with a more natural flavor

Ingredients Homemade cream cheese made from milk powder:
-400 ml of water
– 100 g of powdered milk
– 15 ml of lemon (or rice vinegar) THE
– 15 g unsalted butter (1 tablespoon = 20 g)
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- The yield of this recipe is approximately 250g for 4 portions and the test was carried out using soluble powdered milk.
- If you use lemon, wash it, dry it and squeeze the juice.
PREPARATION:
Homemade Creamy Cheese – Milk Cut:
- Place the water (see quantities in the ingredients) and the powdered milk in a saucepan. If you can’t measure milk powder in grams, consider 1 tablespoon = 12.5 g (or 8 tablespoons per 100 g).
- Mix well to dissolve it with a wire whisk.
- Keep some milk in a bowl (about 30 ml for every 2 portions) – to adjust the creaminess of the curd when mixing. If your powdered milk is not soluble, wait until it heats up and dissolves completely before setting it aside.
- Bring the milk to the boil over medium heat in a deep pan, checking that it does not rise.
- Turn off the heat and add the lemon juice or alcoholic vinegar.
- Mix a little and wait for it to thicken: wait 10 to 15 minutes.
- While you wait, separate the glass jars you’ll use to store your produce. Place it in a pan, cover with water and bring to the boil together with the lid(s).
Homemade cream cheese (continued) – separate the solid part from the whey:
- Pass the curdled milk through a fine mesh strainer and press with a spoon to release all the liquid, i.e. the whey (advice: cover the strainer with a clean, damp cloth and then wring the cloth to remove all the liquid).
- Save whey, which has a high protein value, for use in other recipes, such as cakes, soups or sauces. Store in the refrigerator or freeze in ice-making molds.
- Check the pot(s), remove with kitchen tongs and let dry naturally.
Homemade ricotta (beat):
- Place the remaining milk mixture in the sieve or cloth into a blender or food processor.
- Add the salt, the butter and beat or work until you obtain a very smooth and homogeneous mixture.
- Check the consistency of the curd and if you prefer a less dense consistency, gradually add a little more reserved milk until you reach the desired consistency.
- Transfer the homemade cream cheese to one or more jars or glasses with lids.
- Refrigerate for at least 3 hours until reaching the ideal point for consumption.
FINALIZATION AND ASSEMBLY:
- Serve the homemade cream cheese (from milk powder) to accompany breakfast or a snack: the flavor is much more natural and the final product is creamy and much healthier.
