Sweet corn cake with guava paste
Time: 1 hour
Performance: 8 servings
Difficulty: easy
Ingredients:
- 4 eggs (whites and yolks separated)
- 3 tablespoons softened butter
- 2 cups sugar (tea)
- 1 1/3 cups milk (tea).
- 2 cups (tea) of wheat flour
- Margarine and wheat flour for greasing
- 1 cup cubed guava paste
- 2 tablespoons cornstarch
- 1 cup creamy guava paste 1/2 cup (tea).
Preparation method:
- In an electric mixer, beat the egg whites.
- Without stopping whisking, add the egg yolks, butter and sugar one at a time.
- Continuing to beat, alternate the milk with the flour and cornflour until a smooth mixture is formed.
- Add the yeast and mix with a spoon.
- Place in a 20cm diameter plum cake pan, buttered and floured, with a hole in the centre.
- Dip the guava cubes in the cornstarch and spread them over the dough, allowing it to sink in slightly.
- Bake in a preheated medium oven (180ÂșC) for 35 minutes or until golden brown.
- Remove from the oven, leave to cool, cover with creamy guava paste and serve.
