Creamy Cassava Ingredients:
– 400 g cassava / cassava / peeled cassava – see preparation
– 1/4 cup(s) of grated parmesan.
– 1 tablespoon unsalted butter
– Salt to taste
Ingredients TO SPRAY OR BRUSH (OPTIONAL):
– melted oil to taste (or unsalted butter)
PREPARATION:
- For the 2-portion recipe, use a 20×20 cm baking tray.
- Separate the recipe ingredients and utensils.
- Cook the cassava (see preparation).
- Grate the parmesan, if you didn’t buy it already grated.
PREPARATION:
Cooking cassava (do this step during pre-prep)
- Peel (if you haven’t purchased it already peeled) and wash the cassava well, cutting it into small pieces.
- Place the cassava in a pan and cover it with water (about 2 fingers above the height of the cassava).
- Add salt.
- Cover the pan and place it over high heat. Once it boils, reduce the heat to medium and cook for about 20 minutes or until very soft. This time may vary depending on the quality of the cassava.
- Turn off the fire.
Prepare the creamy cassava in the Airfryer:
- Drain the cassava and remove the central thread.
- Place it in an auxiliary plate and mash it with a fork until you obtain a puree.
- Add the grated parmesan and butter, mixing well. Check the salt.
- Transfer to a square or rectangular shape, so that the mixture is 1 to 1.5 cm high.
- Smooth the surface well and cover with cling film where it touches.
- Store in the refrigerator for at least 30 minutes.
Cooking in the Airfryer:
- Preheat the Airfryer to 200°C.
- Remove the creamy cassava from the refrigerator and invert it onto a cutting board.
- Cut into strips of approximately 2 cm, compatible with the size of the Airfryer basket.
- Brush or drizzle the cassava with a little oil or melted butter for a crispier crust (optional).
- Arrange the cassava in the Airfryer basket, without overlapping them, leaving space between the strips to allow air circulation. If necessary, divide it into steps.
- Place the basket in the drawer and bake for 15-20 minutes, or until the cassava is crispy and golden on the outside and soft on the inside. Turn the cassava 2 or 3 times during the process to brown it evenly.
- When crispy and golden, remove the basket from the Airfryer.
FINALIZATION AND ASSEMBLY:
- It is used for creamy cassava ready at Airfryer very hot, so that the shell is crunchy and the inside creamy.
- It can be served as a snack or as an accompaniment to the main course.
