Simple and very soft corn flour and fennel cake

If you love one cornmeal cake traditional grandma style, you will love this version anise and peanut butter. The new ingredients add layers of flavor to the cake, which remains fluffy and melts in your mouth.

Corn flour and fennel cake

Time: half past one

Performance: 8 servings

Difficulty: easy

Ingredients:

  • 2 eggs (whites and yolks separated)
  • 2 1/2 cups (tea) sugar
  • 3 tablespoons peanut butter
  • 3 tablespoons butter
  • 1 cup and 1/2 cup (tea) wheat flour
  • 1 tablespoon of yeast
  • 2 cups milk (tea)
  • 1 cup and 1/2 cup (tea) cornmeal
  • Margarine and wheat flour for greasing

Preparation method:

  1. Using a mixer, beat the egg yolks with the sugar, peanut butter and butter.
  2. Add the cornmeal, flour, yeast, fennel and milk, beating well.
  3. Add the whipped egg whites, mixing without beating.
  4. Pour into a buttered and floured 30cm diameter cake tin.
  5. Bake in a preheated medium oven for about 45 minutes until an inserted toothpick comes out clean.
  6. Unmold and serve.
