Broccoli and bacon risotto

Ingredients:
- 5 cups (tea) of water
- 3 vegetable broth cubes
- 4 tablespoons butter
- 300 g diced bacon
- 1 onion chopped
- 2 cups arborio rice
- 1/2 glass of dry white wine
- 1 bunch of pre-cooked ninja broccoli florets
- 1/2 cup grated parmesan
- 2 tablespoons cream cheese
- Grated parmesan for sprinkling
Preparation method:
- Put the water in a pan and bring it to the boil, add the diced vegetables and keep warm, without boiling.
- Melt 2 tablespoons of butter in a pan and fry the bacon over high heat until golden brown.
- Transfer to a plate and set aside.
- Return the pan to medium heat with the remaining butter, add the onion and rice and fry for 3 minutes.
- Add the wine and cook until it evaporates.
- Add the hot vegetable broth, little at a time, using a ladle, stirring constantly, until the rice is al dente.
- Add the broccoli, the reserved bacon and cook for another 2 minutes.
- Turn off the heat, add the parmesan and cream cheese and mix.
- Transfer it to a serving dish and serve quickly sprinkled with parmesan.
