At the request of the “Paladar”, 7 chefs from the main restaurants in São Paulo chose their favorite sushi (and other delicacies)
São Paulo has an impressive quality of Japanese restaurants – from those more traditional freedompassing through modern homes with omakases contested and up to the most diverse requests, such as for example izakayas and tea houses. There are options for all tastes. And so the question remains: how to choose the ideal Japanese restaurant?
Palate, they then asked chefs from major restaurants in São Paulo to choose their favorite Japanese restaurants. These are options that reflect the city’s diversity and showcase the quality of sushi, sashimi, tea and more.
Bruno Hoffmann (Benjamin Osteria Moderna) | Sushi Vaz
“I frequent Sushi Vaz a lot. The dishes are tasty, high quality products, with incredible technique and good value for money, which makes everything even more interesting for me.”
Service: Alameda Santos, 2528 B – Bella Vista | Tuesday to Friday: 12pm to 8pm, Saturday: 12pm to 4pm, Sunday: 12pm to 4pm | @sushi_vaz.
Fred Caffarina (Make hummus. Not war) | Goya, Kotori and Mori Chazeria
“Those who know Uilian Goya know how attentive he is to the techniques and details of each preparation. [O Goya] It’s a unique Omakase experience [R$ 490 por pessoas]and you can trust him. Now on Mondays there is Makanay, no reservations, just arrive. [Já o Kotori] It’s one of the restaurants that’s a little different from what we’re used to as a Japanese restaurant. I like the proposal, the service, the perfection of the yakitori and toasted onigiri. The menu changes a lot. It’s always fun to go and discover new options. And as a lover of tea and Japan, I couldn’t leave out this place: the Mori Chazeria. Patrícia Akemi went to Japan to study teas and offers a unique experience, such as the Matcha ceremony and delicious barley tea. The food is reminiscent of batchan, super comforting, like Karê served with one of the best karagues [a partir de R$ 49,90] which I have already eaten. There’s also delicious wagashi, sweet mochi and anko [R$ 25,90], for teas. OH! Every now and then on weekends they serve a typical Japanese breakfast, you have to pay attention to the dates.”

Pedro Oliveira (View) | Kinboshi and Shin-Zushi
“I really like these izakaya, [como o Kinboshi], I fell in love with this style at the late Bueno, owned by the same owner and chef. Lots of flavor and care in everything that is prepared. For me, the best gyutan in Sao Paulo. [Já o Shin-Zushi] It has technique, flavor, freshness, excellent ingredients. You will hardly find it in Brazil, somewhere with a level of sushi similar to that of Japan and Shin-Zushi does it masterfully. The omakase [R$ 600] It’s really worth it.”
Service:
- Kinboshi: Rua Coronel Oscar Porto, 319 – Paraíso, Sao Paulo | From Monday to Friday, from 11.30am to 2.30pm and from 7pm to 11pm, on Saturdays from 12pm to 3pm and from 7pm to 11pm. Instagram: @kinboshikaraoke.

Giovanni Renê (Braza and The Cup) | Koya88 and Goya
“Among all the Japanese, Koya88 offers the most interesting proposition. The concept of bringing Asian street cuisine into a relaxed atmosphere is truly admirable. By far my favorite. Now, when it comes to omakase, Uilian’s work Goya, from Goya stands out, being one of my favorites in Sao Paulo. The selection of ingredients he prepared is always amazing. My latest omakase experience was surprising and enchanting.
Service:
- Koya88: Rua Jesuíno Pascoal, 21 – Vila Buarque, Sao Paulo | Tuesday to Saturday from 6pm to midnight, Sunday from 1pm to 7pm | Instagram: @koya88.

Wanderson Medeiros (Canto do Picuí) | Jun Sakamoto
“Of course Jun Sakamoto. Every time I’ve visited the place, no matter if Jun served it personally or not, the omakase is always exceptional in its simplicity, with top-notch fish and sea urchins.”
Service: R. Lisbon, 55 – Pinheiros, Sao Paulo | From Tuesday to Saturday from 7.00pm to 11.00pm | @restaurant_junsakamoto
Hyssa Abrahim (Bar Clothesline) | Hamatyo
“The peaceful environment of Hamatyo manages to transport me away from São Paulo and make me feel present when you taste Japanese cuisine. The environment of the restaurant, managed by the founders of the restaurant, is accompanied by a lot of tradition, affection and care in every dish served” .
Service: Avenida Pedroso de Morais, 393 – Pinheiros, Sao Paulo | From Tuesday to Saturday from 6.30pm to 9.30pm | Instagram: @sushi_hamatyo.
Mari Sciotti (Quincho) | Nami and Kiyota
“Nami is a rotation of those that make most people turn up their noses, but it was successful. They moved to Moema some time ago, in a new and enormous space. The rotation [R$ 199,90] It is super complete, well made and well served. There are scallops, king crab, seafood and the like. All orders are made via tablet at the table, and the price is in line with what is abundantly served. For those who love the all you can eat model but don’t want to give up quality, it’s definitely worth it. Also in Moema, Kiyota is a more traditional Japanese restaurant. They also operate on a rotating basis, but well within what is expected of more “radical” restaurants. There are not many fried foods and it is not a place to eat freely, but rather with extreme quality, good prices and good delivery. Hours are more limited, but it’s worth a visit.”
Service:
- Nami: Av. Aratãs, 765 – Indianópolis | Tuesday to Saturday from 6pm to midnight, Sunday from 1pm to 7pm | @sushinamisp
- Kiyota: Av. dos Imarés, 542 – Moema | From Tuesday to Saturday, from 7pm to 11pm | @kiyotasushibarmoema
