A very moist and delicious cornmeal cake, with shredded coconut, measured in 1 cup and cooked in the Airfryer

Ingredients Coconut cornmeal cake

– 1/2 cup(s) cream cheese (starch-free) (use cup to measure cake)

– 1/2 glass of milk

– 1/2 cup(s) oil, plus a little more for basting.

– 2 eggs, whole

– 1/2 cup(s) of wheat flour

– 1/2 cup(s) corn flour (mimosa), plus a little more for flouring.

– 1/2 cup(s) of sugar

– 1/2 tablespoon(s) of chemical yeast

PREPARATION:

  1. Separate the ingredients and utensils for the recipe.
  2. Use the cream cheese cup to take measurements.
  3. If you don’t have a cup of ricotta, the standard measurement for this recipe, use the equivalent of 200ml in a measuring cup.
  4. Grease the molds of the size compatible with your Airfryer with oil and sprinkle them with corn flour.
  5. For this recipe, 02 portions were used: a mold with a hole in the center, 20 cm in diameter and 6 cm high.
  6. Sift the cornmeal and flour into a bowl.
  7. Preheat the Airfryer to 160°C.

PREPARATION:

Cornmeal cake with coconut in the Airfryer – preparation of the dough:

  1. Place the cream cheese, milk, oil, eggs and sugar in a blender and beat well until smooth.
  2. Add the sifted flour and cornmeal and whisk, just to mix.
  3. Add the grated coconut and the yeast, mixing with a spatula, without beating.
  4. Transfer the dough to the greased and floured pan.

Cornmeal cake with coconut in the Airfryer – bake in the Airfryer:

  1. Place the pan in the Airfryer basket, insert it into the drawer and close the appliance.
  2. Bake at 160°C for about 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  3. Remove the cake from the Airfryer and leave to cool in the pan.

FINALIZATION AND ASSEMBLY:

  1. Unmold the Cornmeal cake with coconut in the Airfryer on a serving plate.
  2. Cut into slices and accompany with a delicious coffee.
