As in any self-respecting arraiá, there is no shortage of delicious delicacies and, among the most traditional ingredients of this season, there is corn! June Corn Pie:
Time: 1 hour
Performance: 10 servings
Difficulty: easy
Ingredients:
- 2 cans drained green corn
- 1 cup and 1/2 cup (tea) milk
- 3 eggs
- 1/2 cup (tea) oil
- 1 cup grated parmesan
- 1/2 cup (tea) cornmeal
- 2 cups sugar (tea)
- 1 cup (tea) wheat flour
- 1 tablespoon of chemical yeast
- Powdered sugar and cinnamon for sprinkling
Preparation method
- In a blender, blend the corn, milk, eggs, oil, cheese and cornmeal until smooth.
- Transfer to a bowl, add the sugar, flour, yeast and mix with a spoon.
- Pour into a 25cm x 35cm baking tray lined with baking paper and bake in a preheated medium oven for 35 minutes or until firm and golden.
- Remove from the oven, leave to cool, cut into pieces and sprinkle with sugar and cinnamon before serving.
