June corn cake is a holiday must

June has arrived and with it the most delicious typical festivals of the whole year! As in any self-respecting arraiá, there is no shortage of delicious delicacies and, among the most traditional ingredients of this season, there is corn! June Corn Pie:

Time: 1 hour

Performance: 10 servings

Difficulty: easy

Ingredients:

  • 2 cans drained green corn
  • 1 cup and 1/2 cup (tea) milk
  • 3 eggs
  • 1/2 cup (tea) oil
  • 1 cup grated parmesan
  • 1/2 cup (tea) cornmeal
  • 2 cups sugar (tea)
  • 1 cup (tea) wheat flour
  • 1 tablespoon of chemical yeast
  • Powdered sugar and cinnamon for sprinkling

Preparation method

  1. In a blender, blend the corn, milk, eggs, oil, cheese and cornmeal until smooth.
  2. Transfer to a bowl, add the sugar, flour, yeast and mix with a spoon.
  3. Pour into a 25cm x 35cm baking tray lined with baking paper and bake in a preheated medium oven for 35 minutes or until firm and golden.
  4. Remove from the oven, leave to cool, cut into pieces and sprinkle with sugar and cinnamon before serving.
