Savory hominy with pork

Time: 1h15 (+12h soaking)

Ingredients:

  • 1 kg of pork ribs
  • Salt to taste
  • 1 cup diced bacon
  • 3 cloves garlic, minced
  • 2 onions cut into rings
  • Chopped green chili pepper to taste for sprinkling

Preparation method:

  1. Place the hominy in a bowl, cover with water and leave to macerate for 12 hours.
  2. Cut the ribs into pieces and season them with salt, rubbing them well on the meat.
  3. In a large skillet, over medium heat, fry the bacon until the fat has been rendered.
  4. Remove the bacon and set aside.
  5. Meanwhile, in the same pan, in the fat that has formed, fry the ribs, little by little, until golden brown.
  6. After all the pieces are fried, return all the meat to the pan.
  7. Over low heat, fry and add the water little by little, spoonful by spoonful.
  8. Do this process until the meat is tender.
  9. Add the garlic to the meat and then fry for 2 minutes.
  10. Add the onion and reserved bacon.
  11. In a pressure cooker, over low heat, cook the hominy, covering with water, for 30 minutes from the start of the pressure.
  12. Release the pressure, open the pan and set aside.
  13. Mix the cooked hominy with the water from the pan with the meat and let it boil for 20 minutes, over low heat.
  14. Arrange on a plate or earthenware bowl, sprinkle with the green perfume and serve immediately.
