This typical Brazilian dessert, the quellejadinha, in a version without flour and without condensed milk to be prepared in the airfryer

Airfryer Cassava Cheesecake Ingredients
– 3/4 cup(s) cassava/manioc, on the medium side
– 1 unit of eggs
– 1/2 cup(s) of sugar
– 1 and 1/2 tablespoons of oil
– 1/2 cup(s) finely grated semi-hard cheese (or standard Minas cheese)
– 1/2 cup(s) dry shredded coconut
Ingredients FOR GREATING:
– unsalted butter to taste
PREPARATION:
- The recipe for 2 portions requires obtaining 6 units in disposable 7cm diameter molds.
- Separate the ingredients and utensils for the recipe.
- Grease the disposable molds with a little butter and place them inside the muffin or tart molds.
- Grate the cassava on the medium side of the grater, place it in a bowl, pour a little water over it and set aside.
- Preheat the Airfryer to 160°C.
PREPARATION:
Cassava quellejadinha (without condensed milk) in the Airfryer:
- Filter the cassava through a sieve, pressing well to remove all the water.
- Break the egg/s into a bowl, add the sugar and oil and mix well, preferably with a whisk, until you obtain a smooth cream.
- Add the drained cassava to the egg mixture and mix.
- Add the grated coconut and cheese and mix again to incorporate the ingredients.
- Distribute the dough into the greased disposable molds, without reaching the edge, so that it does not overflow during rising – do not press the dough when placing it in the molds.
- Place the molds in the Airfryer basket and insert them into the drawer. If necessary, divide it into stages based on the capacity of your Airfryer.
- Close the drawer and bake at 160°C for about 15 minutes – this time can vary, depending on the quantity of dough in the molds and the power of the equipment – or until the cheesecakes are golden and a toothpick inserted in the center comes out . clean.
- Remove from equipment and let cool.
FINALIZATION AND ASSEMBLY:
- It is used for cassava quellejadinha (without condensed milk) in the Airfryer in molds or unmold.
