Cocoa and granola muffins

Yield: 8 servings

ingredients

  • 1 ½ cups (tea) oat bran
  • 2 eggs
  • 2 bananas
  • 130ml coconut, almond or oat milk
  • 1 teaspoon ground cinnamon
  • 2 tablespoons coconut oil
  • 2 tablespoons cocoa powder
  • 1 teaspoon of yeast
  • Granola with dried fruit to decorate

Preparation method

Leave the oven preheated to 185°C and grease a muffin mold with oat bran. Mash the bananas, keeping 6 slices aside, with the eggs and the vegetable drink. Separately, mix the oat bran with the cocoa, baking powder and cinnamon. Add the banana mixture and mix well. Add the coconut oil and pour the mixture into the molds. On top, add a banana slice to each mold. Cook for about 25 minutes. Remove from the oven, place the granola on top and serve.
