Crepioca with functional cheese ingredients

Pasta

  • 2 eggs
  • 2 tablespoons of tapioca starch
  • 1 tablespoon of oat bran
  • 1 tablespoon of wholemeal flour
  • 1 tablespoon of coconut flour
  • 1 tablespoon (sweet) of coconut oil
  • 1 tablespoon of water
  • 1 pinch of salt

Filling

  • Cottage cheese
  • Cherry tomato
  • Origan

Method of preparation

To make the dough, mix the eggs with the tapioca starch, oat bran, wholemeal flour, coconut flour, plus oil, water and salt. Mix all the ingredients well until a homogeneous mass is obtained. Cook the dough in a non-stick pan, browning it on both sides for stuffing. Stuff the dough with diced ricotta, cherry tomatoes and oregano.
