Chocolate Cake with Blended Oats: Dairy-Free and with a Secret to Staying Moist and Fluffy

Ingredients CHOCOLATE CAKE WITH OATS
– 4 units of eggs
– 600 g of apples (2 medium units every 2 portions)
– 2/3 cup(s) of brown sugar
– 2/3 cup(s) oil + a little for greasing
– 1 1/2 cups coconut milk
– 1/2 cup(s) of water
– 2/3 cup(s) chocolate powder + a little for dusting
– 2 cups gluten-free oatmeal
– 2/3 cup(s) cornstarch
– 1 1/3 tablespoon baking powder
PREPARATION:
- Separate the utensils and ingredients for the recipe.
- For 4 servings (1 whole recipe), use 1 rectangular baking pan approximately 20×30 cm or a round baking pan 23 cm in diameter with a hole in the centre.
- Grease the mold with oil and sprinkle a little chocolate powder.
PREPARATION:
Apples – Microwave cooking:
- Wash the apples well and place them in a plastic bag.
- Close the bag and make a hole to let the steam out.
- Cook over high heat for 4-5 minutes or until apples are tender.
- Carefully remove from the microwave and allow to cool.
- Preheat the oven to 180°C while the apples cool.
Oatmeal Chocolate Cake:
- Cut the cooked apples into quarters and remove the cores.
- In a blender, add the sugar, coconut milk, water, oil and cooked apples and blend until smooth.
- Add the eggs, chocolate powder, oat flour and cornstarch and beat again until the mixture is very smooth.
- Finally add the yeast and mix gently with a spatula.
- Pour the batter into the prepared pan and bake for about 30 minutes or until a toothpick inserted into the center comes out clean (time may vary depending on the height of the cake).
- Once baked, let it cool before turning it out and serving it.
FINALIZATION AND ASSEMBLY:
- Unmold the Oatmeal Chocolate Cake when it’s cold.
- Serve in slices.
