Onion Soup: A Delicious, Light and Simplified Version of a Traditional French Recipe




A traditional onion soup, enriched by the exuberant flavour of cheese, in a low carb version

Recipe for 4 people.

cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients for onion soup

– 100 g unsalted butter

– 800 g of onion cut into thin slices

– xylitol to taste (a pinch)

– Salt to taste

– pepper to taste

– 200 ml of dry white wine

– 2 L of boiling water

Ingredients to finish

– 120 g crumbled gorgonzola

PREPARATION:

  1. Separate all the ingredients and utensils for the recipe.
  2. Put a kettle of water on to boil.
  3. Slice the onion thinly using a mandolin.
  4. Crumble the Gorgonzola.

PREPARATION:

Onion soup:

  1. In a pan, over low heat, add the butter and let it melt without changing color.
  2. Add the onion slices and cook, stirring occasionally, until the onion caramelizes and turns light golden, about 15 minutes.
  3. Season with salt, xylitol and pepper – be careful with the salt as the cheese is already salty.
  4. Pour in the wine, raise the heat to maximum and stir until all the alcohol has evaporated.
  5. Add the boiling water (see quantity in the ingredients) and when it boils again, lower the heat to a medium temperature.
  6. Cook in a covered pan for about 30 minutes, so that the onion loses its acidity.

APPETITE OR SWEET (optional):

Take advantage of the cooking time of the onion soup to prepare your appetizer or dessert.

Onion soup:

  1. As the soup cooks, stir occasionally and make sure the liquid does not evaporate too quickly, if necessary slowly add more boiling water;

FINALIZATION AND ASSEMBLY:

  1. It is used for low carb onion soup in a soup bowl or, if you prefer, distribute it on deep plates or individual bowls.
  2. Finish with the gorgonzola pieces on top.
