Ingredients CARROT AND CHOCOLATE CAKE WITH OATS

– 300 g carrot (1 medium carrot corresponds to 120 g) – peeled and cut into pieces

– 1 cup(s) oil, plus a little more for greasing the molds (or coconut oil)

– 4 units of eggs

– 2 cups demerara sugar

– 1 cup(s) gluten-free flour mix

– 1 cup(s) of gluten-free oat flour (or gluten-free oat bran)

– 2 tablespoons of chocolate powder (added only halfway through the dough)

– 1/2 tbsp baking powder THE

– 1/2 tablespoon(s) of baking soda THE

– 60 ml of water (added halfway through the dough)

– 100 g of semi-sweet gluten-free chocolate in calletti or chopped

Ingredients for the chocolate coating:

– 3 tablespoons of chocolate powder

– 70 g of semi-sweet gluten-free chocolate in calletti or chopped

– 1 tablespoon unsalted butter

– 80 ml of milk

– 2 tablespoons of demerara sugar

PREPARATION:

  1. Separate all the ingredients and utensils for the recipe.
  2. Wash and peel the carrots and cut them into medium slices.
  3. Sift the gluten-free flour mix.
  4. 1 standard recipe serves 4 people: use a 30cm x 20cm rectangular pan or a 25cm round pan.
  5. Grease the pan(s) with oil and sprinkle with gluten-free flour.
  6. If you don’t have callets, chop the chocolate into small pieces and add to the mixture.
  7. Preheat the oven to 180°C.

PREPARATION:

Carrot and Chocolate Cake with Oats – dough preparation:

  1. In a blender, blend the carrot slices with oil or coconut oil.
  2. Still beating, add the whole eggs, one at a time, until you obtain a smooth mixture.
  3. Add the sugar and beat to combine.
  4. Transfer the dough to a bowl and, using a wire whisk, gradually add the gluten-free flour and the oat flour/bran.
  5. Finally add the yeast and the bicarbonate.
  6. Place half of the dough in the greased and dusted pan.
  7. Then add the chocolate powder and water to the rest of the mixture. Beat to combine.
  8. Using a zigzag pattern, arrange the remaining beaten chocolate mixture over the carrot mixture.
  9. Using a knife, make zigzag movements in the opposite direction.
  10. Add the chocolate chips and fold in.

Carrot and chocolate cake with oats – cooking:

  1. Place in a preheated oven at 180°C and cook for approximately 1 hour (the time may vary depending on the size of the cake, its height and the oven).
  2. Do the toothpick test to see if the cake is cooked: it should come out dry.
  3. Remove from the oven, shake the pan slightly to see if the cake loosens.
  4. Let it cool while you prepare the syrup.

Gluten-free and Lactose-free Economical Chocolate Covering (with Cocoa):

  1. Place all the syrup ingredients in a pan.
  2. Bring to the boil over low heat, stirring.
  3. Let the chocolate melt and the syrup thicken slightly.
  4. Pour the syrup over the cooled cake.

FINALIZATION AND ASSEMBLY:

  1. Unmold and transfer the carrot and chocolate cake with oats to the serving dish.
  2. Cut into pieces and serve.
  3. Store outside the refrigerator for up to 2 days.
