Potato bread with dried meat

Time: 1h (+1h rest)

Ingredients:

  • 3 tablets of fresh organic yeast (45g)
  • 3 tablespoons of sugar
  • 2 eggs
  • 1/4 cup oil (tea).
  • 2 cups boiled and mashed potatoes
  • 1 cup of warm milk
  • 1/4 cup warm water
  • 5 cups wheat flour (approximately)
  • Oil and wheat flour for greasing and flouring
  • 1 egg yolk for brushing

Filling:

  • 2 tablespoons olive oil
  • 1 chopped onion
  • 500g dried meat, desalted, cooked and minced
  • 1 chopped seedless tomato
  • 1 cup chopped green olives
  • Salt, black pepper and chopped green chili pepper to taste
  • 1 cup (tea) of culinary cream cheese

Preparation method:

  1. Blend the yeast, sugar, salt, eggs, oil, potatoes, milk, water and 1 cup (tea) of flour in a blender.
  2. Transfer to a bowl, cover and let rest for 10 minutes.
  3. Add the remaining flour, little by little, kneading until it no longer sticks to your hands.
  4. Add more flour if necessary.
  5. Cover and let rest for another 20 minutes.
  6. For the filling, heat a pan with olive oil over medium heat and fry the onion and meat for 3 minutes.
  7. Add the tomato, olives, salt, pepper, green chillies and sauté for 3 minutes.
  8. Turn off, mix with the curd and set aside.
  9. Take portions of dough, open them between your hands, divide the filling between them and close them to form buns.
  10. Arrange in a large greased and floured pan, leaving space between them, cover and let rest for another 30 minutes.
  11. Brush with egg yolk and bake in a preheated medium oven for 25 minutes or until cooked through and golden.
  12. Let it cool and serve.
