Potato bread with dried meat

Ingredients:
- 3 tablets of fresh organic yeast (45g)
- 3 tablespoons of sugar
- 2 eggs
- 1/4 cup oil (tea).
- 2 cups boiled and mashed potatoes
- 1 cup of warm milk
- 1/4 cup warm water
- 5 cups wheat flour (approximately)
- Oil and wheat flour for greasing and flouring
- 1 egg yolk for brushing
Filling:
- 2 tablespoons olive oil
- 1 chopped onion
- 500g dried meat, desalted, cooked and minced
- 1 chopped seedless tomato
- 1 cup chopped green olives
- Salt, black pepper and chopped green chili pepper to taste
- 1 cup (tea) of culinary cream cheese
Preparation method:
- Blend the yeast, sugar, salt, eggs, oil, potatoes, milk, water and 1 cup (tea) of flour in a blender.
- Transfer to a bowl, cover and let rest for 10 minutes.
- Add the remaining flour, little by little, kneading until it no longer sticks to your hands.
- Add more flour if necessary.
- Cover and let rest for another 20 minutes.
- For the filling, heat a pan with olive oil over medium heat and fry the onion and meat for 3 minutes.
- Add the tomato, olives, salt, pepper, green chillies and sauté for 3 minutes.
- Turn off, mix with the curd and set aside.
- Take portions of dough, open them between your hands, divide the filling between them and close them to form buns.
- Arrange in a large greased and floured pan, leaving space between them, cover and let rest for another 30 minutes.
- Brush with egg yolk and bake in a preheated medium oven for 25 minutes or until cooked through and golden.
- Let it cool and serve.
