The famous recipe of tapioca dadinho from Restaurante Mocotó – more practical and healthy, without frying and prepared in the airfryer

Recipe for 4 people.

1 baking tray(s), 1 jug(s) of milk, 1 bowl(s), 1 cutting board(s), 1 pastry brush(s) (or spray bottle), 1 grater

EQUIPMENT

conventional + air fryer

METERS

cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Dadinho tapioca ingredients:

– 250 g of granulated tapioca

– 250 g of coarsely grated coalho cheese

– 500 ml of heated whole milk

– salt to taste

Ingredients TO ACCOMPANY

– sugar cane honey (molasses or sugar syrup) to taste (optional)

– another of your choice (optional)

Ingredients FOR SPRAYING OR BRUSHING

– oil to taste

PREPARATION:

  1. Separate the recipe ingredients and utensils.
  2. Prepare a baking tray on which to place the dough, grease it with oil and cover it with cling film.
  3. Grate the coalho (coarse) cheese on the grater.
  4. Put the milk with a little salt in a milk jug and heat it over a high heat, without boiling.

PREPARATION:

Tapioca Dadinho – Pasta:

  1. In a bowl, mix the grated rennet with the granulated tapioca.
  2. Pour the hot milk over the tapioca and ricotta mixture.
  3. Wait a few minutes for the tapioca to absorb all the milk.
  4. Place the still hot dough on the baking tray lined with cling film (choose the right size of baking tray so that the dough cubes are 2 cm high).
  5. Place the dough in the freezer for 1 hour or until firm.
  6. Remove from the freezer and turn out onto a cutting board.
  7. Cut into 2x2cm squares.

Tapioca Dadinho – prepare in the Airfryer:

  1. Preheat the Airfryer to 200°C.
  2. Before placing the stock cubes in the Airfryer, brush or spray them with a little oil.
  3. Place the nuts in the basket, without overlapping them, leaving space between them for air circulation. If necessary, divide it into stages based on the capacity of your equipment.
  4. Place the basket in the Airfryer drawer preheated to 200°C and bake for approximately 15-20 minutes or until golden on the outside; this time may vary depending on the power of the Airfryer.
  5. While cooking, turn the nuts so that they are golden on all sides.
  6. Remove the drawer and turn off the appliance.

FINALIZATION AND ASSEMBLY:

  1. Serve the prepared tapioca cubes in the airfryer heat.
  2. Serve with honey, pepper jelly or any other jelly of your choice.
