Cheese Ravioli with Meat Sauce

Ingredients:
- Salt and black pepper to taste
- 700 g of wheat flour
- 7 eggs
- 2 cups medium diced mozzarella
- 1kg of chopped muscles
- 2 tablespoons olive oil
- 1 chopped onion
- 1 tablespoon minced garlic
- 2 rib stock cubes
- 1 glass of dry red wine
- 4 tablespoons tomato paste
- Wheat flour for flouring
- Chopped parsley to taste for sprinkling
- Grated Parmesan cheese to taste
Preparation method:
- In a bowl, mix 1 teaspoon salt into the flour and add the eggs.
- Mix until you get a smooth mixture, knead and roll out the dough and on a floured surface roll out with a floured rolling pin or with your machine.
- Place a cube of mozzarella in each imaginary square and cover with more dough.
- Cut 5cm squares with a knife or cut with a knife and press the edges with the tip of a fork. Book.
- Season the meat with salt and pepper.
- In a pressure cooker, heat the oil over medium heat and fry the onion for 3 minutes.
- Add the meat and brown it.
- Add the garlic, rib broth and wine.
- Cover and cook for 5 minutes from the start of the pressure.
- Release the pressure, open the pan and set aside.
- In a blender, blend the cherry tomatoes and add them to the pan together with the tomato paste.
- Cover with water, if necessary, and cover the pan.
- Cook for another 10 minutes from when the pressure starts.
- Cook the ravioli in plenty of salted water.
- When the ravioli rise to the surface they are ready.
- Drain them with a slotted spoon and arrange them on a plate.
- Cover with the sauce and sprinkle with parsley and parmesan. Serve then.
