Ingredients Dairy-free coconut yogurt, instant

– 1/2 cup(s) almond milk, a little, to thicken

– 100 ml of coconut milk

– 1/4 cup(s) dry grated coconut

– 2 tablespoons of demerara sugar + a little if you like (or xylitol)

– 1 tablespoon(s) of sweet cassava starch

– 1/2 teaspoon(s) xanthan gum

PREPARATION:

  1. Separate the utensils and ingredients for the recipe.

PREPARATION:

Instant Dairy Free Coconut Yogurt:

  1. In a blender or food processor, beat the plant-based milk, coconut milk, coconut, sugar or xylitol, and sweet cassava starch for 1 minute.
  2. Then add the xanthan gum and whisk to combine.
  3. Transfer the mixture to a pan and heat over low heat, stirring constantly, until boiling.
  4. If necessary, adjust the consistency by adding more almond milk.
  5. Return the yogurt to the blender or food processor and blend again.
  6. Allow to cool, cover with cling film and place in the refrigerator for at least 30 minutes.

FINALIZATION AND ASSEMBLY:

  1. Remove the instant dairy free coconut yogurt from the refrigerator and serve as desired.
